The Winston Hotel undergoes major transformation
The Winston Hotel on Caroline Chisholm Drive in Winston Hills is gearing up for its most significant makeover – transforming the iconic local into a luxurious, Palm Springs, Mediterranean-type of hotel in Western Sydney.
Palm Springs Meets Mediterranean Vibes
The beach-inspired renovation costing up $5 million dollars will have patrons sipping cocktails in summer, featuring new furniture, timber framing, pitched ceilings and classic retro graphic details. Floor-to-ceiling glass walls will open to an elevated outdoor dining area with private nooks and cabanas, perfect for private celebrations.
Elevated Dining: A Taste of What’s to Come
The revamped menu promises to “up the ante” with new dishes including fried burrata with provencal sauce, large pots of mussels, and whole grilled sole with sage butter. The clectic bistro and cocktail lounge, Cala, will be serving up cocktails on carts, mojitos and chilli margaritas shaken and stirred tableside.
A New Sports Bar Experience: Taffy’s retro sports bar
Taffy’s Sports Bar has been redesigned with brighter decor and booths featuring mini screens at each table. The renovation acknowledges the growing interest of women in sports and aims to create a welcoming environment.
timeline: A destination for cocktails, dining & social gatherings coming soon
Work on the indoor bistro and cocktail lounge is set to be completed by August, while the outdoor dining area is expected to be ready by early spring.

The hotel will continue running it’s weekly specials and events including its $20 Monday night schnitzels, Trivia Tuesdays and plans to host cocktail and whiskey masterclasses in November and December.
